MADDIE’S NACHO BURGER:
For the PATTIES (this will make about 4-6 patties):
1 can drained and rinsed black beans
1 medium sized poblano pepper (diced)
3 cups cooked brown rice/quinoa (you can use a mixture of both or just one!)
4 tsp chilli powder
2 tsp garlic powder
2 tsp paprika
2 tsp cumin
salt & pepper to taste
– Add all ingredients (except tortilla chips) to a food processor or blender and pulse until well combined, but not too combined that it turns into a paste!
– Form the patties. Crush your tortilla chips into very small pieces and coat the outsides of the patties as best you can!
– Bake at 400F for about 25-35 minutes, turning half-way.
CASHEW SOUR CREAM:
1.5 cups soaked cashews (overnight is best!)
1 tbsp apple cider vinegar
juice of 1 small lemon (start out by doing half, and tasting to see how you like it! I prefer more lemon in mine).
1/2-1 tsp salt (to your tasting)
– Add all ingredients into a high speed blender and blend until super smooth and no cashew chunks are left!
CHEESE SAUCE :
2 cups diced potatoes
1 cup diced carrots
1/4 cup diced onion
2 cups nutritional yeast (save 1/2 cup for end)
1tbsp garlic powder
1/2 cup of water from the pot (used to boil veggies)
1/3 cup plant based milk
Juice from 1/2 a lemon
– Boil potatoes, carrots, and onions in a small pot until tender. Using a slated spoon transfer veggies into a blender. Add 1/2 cup of the remaining water form the veggies into the blender.
– Add rest of ingredients to blender and blend on high until smooth!

TOP IT OFF WITH:
– mashed avocado
– sliced tomato
– more tortilla chips
– lettuce
– salsa
– cheese
– sour cream
KYLE’S BREAKFAST BURGER:
For the PATTIES (this will make about 4-6 patties):
1 can drained and rinsed black beans
1/2 cup diced green pepper
3.5 cups diced (steamed) potatoes
3 tsp garlic powder
2 tsp paprika
2 tsp onion powder
salt and pepper to taste
– Add all ingredients to a food processor or blender and pulse until well combined, but not too combined to make a paste!
– Form into small, thin patties and bake at 400F on a lined baking sheet for about 20-25 minutes turning half way (make sure they don’t burn!)
TOFU SCRAMBLE:
125 g extra firm tofu, crumbled (with as much water pressed out as possible)
1/4 tsp turmeric
1/3 cup diced tomato
1/4 cup diced onion
– In a large non stick pan over medium high heat, cook onions (adding water as you need to make sure they don’t burn) until they have just started to become translucent
– Add the tofu, and turmeric and combine well. Then add the tomatoes and cook for another 3-4 minutes.
TOP IT OFF WITH:
– spinach
– hot sauce
– sliced avocado
– tofu scramble
– cheese sauce (see Maddie’s recipe)
