Tuna, broad bean & risoni salad

Yields: 4 servings
Ingredients:
1) 2 cups of the frozen broad beans
2) 1.5 cups of dried risoni
3) 0.425kg Green-seas tuna chunks
4) 0.25kg of fresh crumbled ricotta
5) 2 tea spoons of grated lemon rind
6) 0.25 cup lemon juice
7) 1 tablespoon of extra virgin olive oil
8) 2 tablespoons of fresh mint leaves
9) 3 tablespoons of chopped fresh mint leaves
Instructions:
- · Place broad beans in a bowl with boiling water for 5 minutes and pearl.
- · Boil risoni in saucepan with salted water until tender. Add broad beans in the last minutes. Drain water and transfer them to another bowl.
- · Add tuna, lemon rind, ricotta, oil, mint, juice to pasta. Season, toss to combine and serve.
