Kevin is using the braising cooking method which is a very common way of cooking, especially vegetables, in Mauritius where we saute them on high heat in a little fat first until they get a caramelised coating, then cover and simmer at a lower temperature until the vegetables are tender. Vegetables cooked in this way release a rich deep flavour into the cooking liquid.
By the way, if you are not a great fan of tofu because of the bland taste, then try preparing it the way Kevin did here in this curry, i.e. frying it first then adding it to the sauce. Tofu cooked in this way has a crispy outer layer contrasting with the pillowy tender centre and makes a most appealing texture that picks up flavours nicely.
