Mother’s Day Pancake Recipe Ideas – Protein Pancakes – Healthy and Delicious

Mother’s Day is quite possibly the most special day of the year. It’s the one day of the year specfically dedicated to the women that have made all of us the people that we are today. In honor of that contribution Abbey has created several healthy as well as delicious pancake recipes high in protein that your Mom would love to eat this Mother’s Day.

This Mother’s Day don’t treat your Mom to pancakes made from a carb loaded box of questionably good ingredients. Give your Mom the gift that keeps on giving. Abbey has teamed up with her friends over at at Genuine Health to bring you three different protein pancake recipes that are sure to be a hit with Mom. Each of these recipes features the Genuine Health Protein Powder for a good reason, it’s actually a completely unique product. Instead of your typical whey protein it’s made with grass fed fermented dairy protein. This fermentation makes it way easier to absorb and digest. To put it another way, you get all the high absorption benefits of dairy-based protein powders like whey but get to skip the bloated, crampy side effects that often come with it.

The first recipe on the list is Gluten Free Strawberry Lemon Cheesecake Pancakes. Yes, they taste every bit as good as they sound like they would. Add 1 ¼ cups of gluten free oats to a food processor or blender and pulse until they turn into a powder. Mix in a tsp of cinnamon and the add a scoop of vanilla Genuine Health fermented Greek Yogurt Proteins+ Powder. Pulse this with your food processor until it’s all combined well. In another bowl mix together vanilla, plain fat free Greek yogurt, skim milk, honey, lemon zest, egg, baking powder and a pinch of salt. Now gently mix your dry ingredients into your wet ingredients and allow the batter to rest for about 10 minutes. Next you will heat a large non-stick skillet on medium and grease it with your choice of non-stick cooking spray, oil or butter. Pour 1/4 cup circles of batter into your heated pan. When you start to see bubbles form around the edges flip and continue to cook until golden brown on both sides. When properly cooked put your pancakes on a plate and keep them warm by tenting it with foil.

Meanwhile, in a food processor or blender, puree the cream cheese, yogurt, lemon zest and honey together and set it aside. Now cook up some frozen strawberries with a little water and honey in your favorite saucepot until they look nice and saucey. Now dollop a few spoonfuls of cheesecake filling between each of your protein pancakes and top them off with your strawberry sauce.

Time to move on to the next recipe. Abbey’s one of a kind Black Forest Cake Pancakes. You will start with the same batter but leave out the lemon zest and add 1 tbsp of cocoa powder to the mixture instead. You will also make your sauce the same way but you will use dark frozen cherries and sweeten a little Greek yogurt with honey for your cream filling. Garnish your creation with decadent chocolate shavings and you will one ecstatic Mom.

The last recipe, and coincidentally Abbey’s favorite is for her Chocolate Banana Peanut Butter Pancakes. Start with the same go-to Protein-Packed Pancake Recipe but again skip the lemon zest and this time add a few sliced bananas and some mini dark chocolate chips to your pancakes while they are cooking. Then mix a spoonful of softened peanut butter to your Greek yogurt filling top your mixture with more bananas some crushed peanuts and more chocolate chips.

Any one of these recipes would be a great way to celebrate Mother’s Day and show your mom just exactly how good of a job she did raising you. Feel free to add your own special flare to any of these recipes as well.
