Blanche met world renowned Chef Hoss Zare of San Francisco’s landmark restaurant, Fly Trap. He shares a super easy vegetarian recipe for Koofteh, which is traditionally made with meat.
Ingredients for Kofta:
3/4 cup soaked bulgur wheat
3/4 cup black beans soaked overnight (or canned)
3/4 cup kidney beans soaked overnight (or canned)
1 tbs za’atar
1 tsp cumin
1 egg
1/3 cup panko crumbs
salt and pepper to taste
For sauce:
Roast at 425 for 15 minutes:
3 tomatoes
1/2 onion
10 cloves garlic
handful of cilantro
all mixed with 2 tbs olive oil and salt and pepper to taste
Puree sauce ingredients into food processor
