▶️ LENTIL SPAGHETTI RECIPE INGREDIENTS: (4 to 5 portions)

1 cup / 200g Brown Lentils (immersed for 8 hours or overnight)
3 Tablespoon Olive Oil
200g / 1+1/2 cup Onion – diced
150g / 1 cup Celery – diced into small bits
150g / 1 cup Carrots – diced into small bits
150g / 1 cup Red Pepper – diced into small bits
1+1/2 Tablespoon Garlic – finely sliced
1/2 Teaspoon Dry Oregano
1/2 Teaspoon Dry Thyme
1/2 Teaspoon Dry Rosemary
1/4 Teaspoon Cayenne Pepper (OPTIONAL)
3 cups / 700ml Water
2 cups / 475ml Passata / Tomato Puree
3 cups / 700ml Vegetable Broth
200g / 1+1/2 cup Dry Ditalini Spaghetti
25g / 1/2 cup Parsley – finely chopped
Ground Black Pepper to taste (I have added 1/2 Teaspoon)
OPTIONAL – Lemon Juice to taste (I have added 1/2 Tablespoon of lemon juice)
(NOTE: Lemon juice is optional – taste the pasta first and ADD ONLY IF NEEDED)

👉 GARLIC OIL TEMPERING:
1+1/2 Tablespoon Olive Oil
1 Tablespoon Sliced Garlic
1/4 to 1/2 Teaspoon Chili Flakes

▶️ METHOD:

Immerse the brown lentils for about 8 to 10 hours or overnight. Once soaked rinse well, drain, and set aside.

Warm a large pot. Combine onion, carrot, celery, red bell pepper, salt and sauté on medium heat until the veggies are slightly brown. Including salt will facilitate water release from the veggies, aiding in faster cooking, so this step is crucial, please do not overlook it. The aim is to gently brown the veggies for added flavor to this dish. This process will take around 7 minutes. Subsequently, add the sliced garlic, dry oregano, thyme, rosemary, cayenne, and sauté for an additional 1 to 2 minutes or until aromatic. Introduce the soaked brown lentils, salt, and water. Blend well, cover, and bring to a rapid boil. Once boiling, lower the heat to medium-low and cook for about 20 to 25 minutes or until the lentils are tender but still retain their form.

Once the lentils are cooked, incorporate the passata/tomato puree, vegetable broth/stock and mix. Cover and bring to a boil. Then add the dry ditalini spaghetti and salt to taste. Cover with the lid and cook for approximately 3 minutes. Uncover and continue cooking for an additional 1 to 2 minutes. Turn off the heat. We are slightly undercooking the pasta by 5 minutes as it will continue to cook in the hot liquid post turning off the heat. Add the chopped parsley, black pepper, lemon juice (optional), and mix well. Lemon juice is optional – taste the pasta first and add only if necessary.

👉 ✅ PLEASE NOTE: WE ARE UNDER COOKING THE PASTA BY 5 MINUTES BECAUSE THE PASTA WILL CONTINUE TO COOK IN THE HOT LIQUID EVEN AFTER TURNING OFF THE HEAT.

For garlic oil tempering: Combine the garlic and olive oil in a small pan and sauté on medium to medium-low heat for several seconds. Then infuse the chili flakes and sauté until the garlic JUST BEGINS to brown. IMMEDIATELY REMOVE FROM HEAT AND INCORPORATE INTO THE COOKED PASTA. Mix thoroughly and serve hot alongside a side serving of green salad.

▶️ RECOMMENDED TIPS:

👉 How do you determine if the lentils are properly soaked? You should be able to effortlessly cut a lentil piece with your fingernails. If not, prolong soaking time.

👉 Adding salt when sautéing the onion and veggies will expedite the cooking process, it’s a crucial step, so ensure it’s included.

👉 SLIGHTLY UNDERCOOK THE PASTA BY 5 MINUTES AS THE PASTA WILL CONTINUE TO COOK IN THE HOT LIQUID even after turning off the heat.

👉 LEMON JUICE IS OPTIONAL – taste the pasta first and add only if necessary.

👉 Every stove varies, so tailor the heat and cooking duration accordingly.
