▶️ INGREDIENTS FOR MUSHROOM RICE (approximately 3 servings):

1 cup / 200g White Basmati Rice (well-rinsed & subsequently soaked in water for 30 minutes, then drained)
3 tablespoons Cooking Oil
200g / 2 cups (loosely packed) – Finely CUT Onions
2+1/2 tablespoons / 30g Garlic – finely diced
1/4 to 1/2 Teaspoon Red Pepper Flakes or to your preference
150g / 1 Cup Green Bell Pepper – Chopped into 3/4 X 3/4 inch pieces
225g / 3 Cups White Button Mushrooms – sliced
Salt to taste (I’ve used a total of 1+1/4 Teaspoons of pink Himalayan Salt)
1+1/2 cups / 350ml Vegetable Broth (LOW IN SODIUM)

1 Cup / 75g Green Onions – chopped
Squeeze of Lemon Juice (I’ve included 1 tablespoon of lemon juice)
1/2 Teaspoon Freshly Ground Black Pepper or to your liking

▶️ COOKING INSTRUCTIONS:

Thoroughly rinse the rice several times until the water runs clear to eliminate any impurities/debris and achieve a significantly cleaner taste. Next, soak the rice in water for 25 to 30 minutes. Subsequently, drain the water from the rice and let it remain in the strainer to eliminate any excess moisture until ready for use.

Warm a wide pan. Introduce cooking oil, thinly sliced onions, 1/4 teaspoon of salt, and sauté over medium heat for 5 to 6 minutes or until they are lightly golden. Including salt with the onion will release its moisture, aiding in quicker cooking, so avoid skipping this step. Add the chopped garlic and red pepper flakes, sautéing over medium to medium-low heat for about 1 to 2 minutes. Then, include the chopped green bell pepper and mushrooms. Sauté the mushrooms and pepper over medium heat for approximately 2 to 3 minutes, observing the caramelization of the mushrooms. Proceed by adding salt to season and sauté for an additional 30 seconds. Add the soaked and drained basmati rice, vegetable broth, and bring to a vigorous boil. Once the water reaches boiling point, cover with a lid and reduce the heat to low. Cook on low heat for approximately 10 to 12 minutes or until the rice is fully cooked.

Upon rice completion, uncover the pan. Allow it to cook without a lid for a brief moment to eliminate any excess moisture. Turn off the heat. Add the chopped green onions, lemon juice, 1/2 teaspoon of freshly ground black pepper, and gently mix to prevent the rice grains from breaking. Exercise caution not to overly mix the rice, as this can result in a mushy consistency. Cover and let it rest for 2 to 3 minutes to allow the flavors to meld.

Serve hot alongside your preferred protein choice. This recipe yields 3 PORTIONS.

👉 Use a wider cooking pan for this preparation. This ensures uniform cooking of the rice, preventing it from becoming mushy.

👉 Following the addition of flavor enhancers, gently and cautiously mix the rice to avoid damaging the delicate rice grains. Avoid excessive stirring at this stage, as the rice grains are tender and liable to become mushy.
