Today I am sharing a very healthy , delicious curry recipe that goes well with rice. This thai inspired peanut curry is so flavourful and easy to prepare. You can add as much veggies as you liked or can skip the vegetables according to your choice. This mixed vegetable curry can be prepare as a vegan curry. Just add tofu instead of paneer or cottage cheese.
Thickness can be adjusted to add more milk or vegetable stock to it. Enjoy this curry with rice, noodles or even as it is.
ingredients:
1 tsp + 1 tsp + 1 tsp – olive oil
1 spoon – chopped garlic
1 spoon – chopped red chilli
1 – onion (sliced)
1 – carrot
1/2 – zucchini
2 tbsp – soya sauce
3/4 tsp – cinnamon powder
1/2 tsp – chilli flakes
3/4 tsp – coriander powder
1/2 tsp – turmeric powder
1 tsp – sugar
150 gm – cottage cheese or paneer / tofu can be used
vegetable stock
1 tsp – salt
2 tbsp – peanut butter ( you can add more )/peanuts (roasted)
zucchini, red yellow bell peppers – quantity according to the choice
some boiled vegetables (carrot, broccoli, beans)
salt and pepper
250 gm – coconut milk
few basil leaves
roasted peanuts for garnishing
