Recipe in English:
Ingredients:
-Cooking oil ¼ Cup
-French beans ½ Cup
-Carrots small cubes ½ Cup
-Cauliflower small florets ½ Cup
-Potatoes small cubes 2 medium (80% boiled)
-Peas ½ Cup
-Boiled corn kernels ½ Cup
-Cumin seeds 1 tsp
-Onion finely chopped 3 medium
-Ginger garlic paste 1 & ½ tbs
-Tomatoes pureed 4-5 medium
-Salt 1 tsp or to taste
-Red chili powder 1 tsp or to taste
-Roasted & crushed coriander seeds ½ tbs
-Kashmiri red chili powder ½ tbs
-Cumin powder 1 tsp
-Turmeric powder ½ tsp
-Yogurt whisked ½ Cup
-Hot water 1 & ½ Cup or as required
-Onion cubes 1 medium
-Capsicum cubes 1 medium
-Green chilies sliced 3-4
-Dried fenugreek leaves 1 tsp
-Fresh coriander chopped
Directions:
-On a griddle, pour and heat up cooking oil.
-Introduce french beans, carrots, cauliflower, potatoes, mix thoroughly & cook briefly.
-Include peas & stir well.
-Mix in corn kernels, stir well & cook for 4-5 minutes & set aside.
-In the same cooking oil, add cumin seeds & stir well.
-Add onion, mix well & fry until lightly golden.
-Stir in ginger garlic paste & mix well.
-Add pureed tomatoes & mix well.
-Season with salt, red chili powder, coriander seeds, Kashmiri red chili powder, cumin powder, turmeric powder, mix well & cook briefly.
-Add yogurt, mix well & cook until oil separates (6-8 minutes).
-Pour in hot water & mix well, cover & cook on low heat for 6-8 minutes.
-Combine stir-fried vegetables, mix well & cook for 2-3 minutes.
-Add onion, capsicum, green chilies, dried fenugreek leaves, fresh coriander, cover & cook on low heat for 8-10 minutes.
-Give a final mix & serve alongside roti!
