Mixed Vegetable Kofta
Serves – 8-10
(Note: Makes 20 koftas, weighing 30g each)

Ingredients:

For the Sauce:
Oil – 3 tbsp
Butter – 3 tbsp
Bay Leaf – 1 piece
Cinnamon Stick (1 inch) – 1 piece
Cloves – 4-5 pieces
Black Cardamom – 1 piece
Green Cardamom – 4-5 pieces
Diced Onions – 3 cups
Ginger – a small piece
Garlic Cloves – 12 pieces
Green Chilli – 2 pieces
Cashew Nuts – 15 pieces
Turmeric Powder – 1 tsp
Kashmiri Chilli Powder – 1 tbsp
Cumin Powder – 1 tbsp
Chopped Coriander – 2½ tbsp
Salt – to taste
Diced Tomato – 4½ cups
Water – 3 cups

For the Kofta Mix:
Chopped Cabbage – ½ cup
Grated Carrot – ½ cup
Chopped Beans – ½ cup
Chopped Capsicum – ½ cup
Chopped Ginger – 2 tsp
Chopped Green Chilli – 2 pieces
Chopped Coriander – a handful
Boiled & Mashed Potato – 1½ cups
Kasoori Methi – 1 tsp
Cumin – 1 tsp
Chilli Powder – 2 tsp
Garam Masala – 1 tsp
Chaat Masala – 2 tsp
Salt – to taste
Roasted Chickpea Flour – 3 tbsp
Fresh Bread Crumbs – ½ cup
Oil – for frying

For Tempering:
Butter – 2 tbsp
Chopped Ginger – 2 tsp
Chopped Green Chilli – 2 pieces
Salt – to taste
Kasoori Methi Powder – a pinch
Chopped Coriander – a handful
Garam Masala – a pinch
Cream – 3 tbsp
