Channa Masala| Indian style Chickpea Curry|Vegan/Vegetarian Recipe

Channa Masala is an Indian style curry made with Chickpeas/Garbanzo beans. It’s a great option for vegetarian/vegan source of protein.

Ingredients for Channa Masala:
Chickpeas (Garbanzo beans/Channa) – 1 ½ cups of dry chickpeas, soaked in plain water for 4-6 hrs and cooked until soft;
Onions – finely chopped, 3 cups;
Tomatoes – crushed/ finely chopped, 1 ½ cups;
Garlic paste – 1 ½ tbsp;
Ginger paste – ¾ tbsp;
Green chillies – 1 or 2 no;
Curry leaves (optional) – 5 to 10 no;
Spices – 1 or 2 bay leaves, 1 ½ tsp cumin seeds (jeera), 1 ½ tsp turmeric powder, 1 ½ tbsp coriander powder; 1 ½ tsp red chilli powder (or as per taste), ¾ tsp cumin powder, 1 ½ tsp garam masala powder, 1 tsp Kasoori methi/dried fenugreek leaves (optional);
Salt to taste;
Sugar – 1 tsp;
Coriander leaves/Cilantro to garnish;
Cooking oil – 4 tbsp
