Winter Roast Bowl (4 servings) Recipe from my app
For the oven tray:
400g potatoes
2 cup cauliflower
2 carrots
1 cup brussels sprouts
1 can (230g drained) chickpeas
1/2 tsp salt
1 tsp paprika powder
1 tsp cumin powder
Dressing:
1/2 cup hummus
1 tbsp lemon juice
1 tbsp maple syrup
1 tsp curry powder
1/2 tsp salt
Water to thin
For the quinoa:
1 cup quinoa, dry
To serve:
Arugula
Chili Flakes
Mustard Glazed Tempeh Bowl (2 servings)
For the rice:
1/2 cup brown rice, dry
Marinade:
200g tempeh
2 tbsp maple syrup
2 tbsp mustard
2 tbsp tamari
Veggies:
200g sweet potatoes
2 handfuls kale
1/4 cup sauerkraut
1/2 avocado
Harvest Bowl (4 servings)
4 beetroots
For the oven dish:
1 fennel bulb
200g broccolini
1 can (230g drained) cannellini/butter beans
1/2 tsp salt
1/4 tsp thyme
For the quinoa:
1 cup quinoa, dry
For the dressing:
4 tbsp tahini
2 tbsp lemon juice
1 tbsp maple syrup
Water to thin
To serve:
1/4 cup walnuts
