hi friends! this week i decided to film 7 easy, delicious and vegan dinner recipes in the hopes that it inspires you to try something new at home 🙂 recipes below!

simple creamy pasta sauce:
– 1/2 brown onion, finely diced
– 1 tsp olive oil
– 8 cherry tomatoes
– 1/2 cup peas
– 1/4 cup water
– 2 cups soy milk
– 3/4 cup nooch
– 2 tsp veggie stock
– 2 tbsp flour
– 50g spinach
– pepper to serve
(serve with 250g cooked spaghetti)

home-made falafels:
– 1/2 red onion
– 1 garlic clove
– small handful parsley
– 1 can chickpeas, drained and rinsed
– 1/2 cup chickpea flour
– 1/2 tsp chilli flakes
– 1 tsp cumin
– 1/2 tsp baking soda
– 1/8 cup tahini
blended until smooth, rolled into 8-10 balls and baked for 15 mins at 180°C fan-forced

crispy chickpeas:
– 1 can chickpeas, drained and rinsed
– 2 tbsp olive oil
– 1 tbsp almond meal
– 2 tbsp nooch
– salt and pepper, to taste
baked @ 180°C fan-forced for 15 mins

tahini slaw:
– 1/4 red cabbage, sliced finely
– 1/2 carrot, peeled and slice finely
– 1/2 cucumber, sliced finely
– 3 tbsp tahini
– juice of 1/2 lemon
– 1 tsp dijon mustard
– pinch of salt

delicious mexican beans:
– 1 tbsp olive oil
– 1/2 red onion, diced
– 3 tsp mingle taco seasoning
– 1/3 cup tinned tomatoes
– 1 x 400g tin black beans, drained and rinsed

tomato and lentil soup:
– 1/2 brown onion, diced
– 2 garlic cloves, diced
– small handful basil
– 1 punnet cherry tomatoes
– 1 cup water
– 1 tbsp veggie stock
– 800g tinned tomatoes
– 800g tinned lentils, drained and rinsed
– 1/2 cup oat cream
– salt and pepper to taste

crispy cauliflower:
– 1/4 head cauliflower, cut into florets
boiled for 15-20 mins
– 3 tbsp olive oil
– 3 tbsp almond meal
– 1 tbsp nooch
– salt and pepper, to taste
– 1 tsp veggie stock powder
bake @ 180°C fan-forced for 20-25 mins
