VEGGIE STEW RECIPE:
1 package frozen mixed vegetables
1 can petite diced tomatoes
1 large container of tomato juice
Season with Salt, Pepper, and Garlic Powder to your liking
Cook on high for 4 hours
POTATO STEW RECIPE:
2 ½ pounds of potatoes – peeled and cubed
1 can of evaporated milk
1 stick of butter – if desired
Garlic powder and minced onion – depending on taste preferences
Salt and Pepper, to taste
Season the potatoes with water and spices. Bring to a boil and simmer until the potatoes are soft. Add butter and crush the potatoes to the desired consistency. Pour in the can of evaporated milk and let it simmer for 15 minutes.
TOMATO TART RECIPE:
2 sliced tomatoes
1 9” pie crust
⅓ diced onion
4 oz grated cheddar cheese
4 oz shredded mozzarella cheese
Bake the pie crust at 350 degrees for 8 minutes.
Prepare the tomatoes: Slice and place on a paper towel-lined baking sheet. Sprinkle with salt and allow to sit for 10-15 mins to remove excess liquid.
Save some of the cheese for the top. Combine the remaining cheese with 1 cup of mayo.
After the pie crust is done baking, layer tomatoes on the bottom, sprinkle with onions and half of the cheese/mayo mixture. Repeat the layering process. Top with remaining shredded cheese.
Bake at 350 degrees for 30 minutes.

BLACK BEAN AND ZUCCHINI ENCHILADA RECIPE:
10 tortillas
1 can red enchilada sauce
1 can diced tomatoes with green chilies
½ diced onion
1 diced zucchini
½ black beans, drained and rinsed
4 oz shredded cheddar cheese
Saute zucchini and onion in a pan with oil until tender. Add in tomatoes and black beans. Season with salt, pepper, cumin (if desired), and garlic powder (if desired) to taste.
Spread ¼ of enchilada sauce in a 9×13 casserole dish. Fill the tortillas with the mixture and roll them up! Place in the casserole dish. Cover with enchilada sauce and cheese. Bake at 350 for 30 minutes.
