3 QUICK AND EASY FRESH SPRING MEAL RECIPES | VEGETARIAN

Welcome back to my channel and to another foodie video. This one is exciting as here in the UK we are entering Spring which is always so lovely when it comes to food and meals! I have linked all of the recipes down below.

RECIPES:
Mushroom & Leek Spaghetti:
2 tbsp olive oil
350g leeks, halved and sliced
380g mushrooms, sliced
2 garlic cloves, chopped
1/2 tsp dried oregano
50g breadcrumbs (we used panko)
300g spaghetti
1/2 lemon, zested and juiced
10g fresh basil
20g parmesan (veggie if you prefer)
Salt & Pepper to taste
Feta and Spinach Pie:
3 tbsp extra virgin olive oil
1 red onion, halved and thinly sliced
3 garlic cloves, finely sliced
3 x 260g packs Essential Spinach, washed
100g Greek natural strained yogurt
200g feta, crumbled
3 salad onions, trimmed and finely sliced
1 unwaxed lemon, zest
1⁄2 x 20g pack dill, roughly chopped
2 medium British Blacktail Free Range Eggs, beaten
270g pack filo pastry
1⁄2 tsp sesame seeds
Chickpea & Sweet Potato Wraps:
2 large sweet potatoes (about 700g)
400g tin chickpeas, drained and rinsed
2 large garlic cloves, crushed
3½ tsp garam masala
80g panko breadcrumbs
1 small red chilli, finely chopped
3 spring onions, finely chopped
2 tbsp olive oil, plus extra for greasing
2 tbsp light mayonnaise
2 tsp harissa
4 plain white tortilla wraps, lightly toasted
60g pack rocket
¼ small cucumber, sliced into half moons
1 lemon, cut into wedges to serve
