One week, one person, 21 meals (plus 14 snacks!), all for just $40.
I eat vegan, so these meals are all vegetarian and dairy-free. I get my produce and most of my pantry staples at my local chain supermarket (Fairway), and some frozen items and specialty vegan products like soy yogurt at Trader Joe’s.

THE MEALS:
Overnight oats – Two parts old-fashioned rolled oats to one part canned pumpkin to one part almond milk. Stir in nut butter (I like almond) and any flavoring–I’ve been using a generous pinch of cinnamon and a tablespoon of maple syrup. Pop it into the fridge overnight. When you’re ready to eat you can add berries, bananas, dried fruit, anything!
Quinoa – One cup quinoa, one 8-oz package mushrooms, one large onion. Cook the quinoa as per the package’s instructions; while that’s going, sautee mushroom and onion for about 10 minutes. When both are done, stir them together.

Parfait – 1/2 cup yogurt, 1 cup berries (fresh or frozen), 1 serving granola. Add agave nectar or honey for extra sweetness.
