Greetings! Recently I shared with you how to make a delicious shaken fruit tea. When I did that I had some of the cut fruit leftover so I put it all in a container and put it in the fridge. I took it out the next day to have with a sandwich and boy was it good. Now that combo only had the pineapple, mango and nectarine in it so I decided to expand the contents of this salad a little and came up with an amazing and delicious tropical stone fruit salad that you are going to love!
This has nectarines, plums, mango, pineapple, grapes and a bit of mint. I topped it off with just a splash of simple syrup to get all the juices flowing and this fruit salad is seriously good! You can of course, skip the syrup and add some pineapple, orange, lemon or lime juice if that is your preference. I just want you to get inspired to make a fruit salad out of seasonal produce.
Stone fruits are in season right now in a bit way. Peaches, plums, apricots, pluots and nectarines as well as fresh cherries, which would be a lovely addition to this. NOT maraschino cherries out of a jar, but fresh dark or even better, Ranier cherries would be amazing. Cut them in half and remove the pits and they would be a wonderful addition here.
This salad is great for any time of day. Breakfast with a bit of yogurt, lunch as a go along to your favorite sandwich, snack with a bit of granola sprinkled on the top and even as a light dessert maybe with a scoop of your favorite sorbet, ice cream or frozen yogurt. Heck, a dollop of sour cream would probably not be bad either! Go ahead, I won’t tell!
Mix this up at the beginning of the week and portion out in little plastic containers and sent it to school in your kids’ lunch! They will love it so much more than the sticky sweet, prepackaged fruit bowls that we often toss in at the last minute.
