This mango salad is a product of me going to the grocery store and salvaging the produce section. That is really the best way to shop and the best way to cook. Everything you want in your meal will be there and everything you don’t, won’t.
Ingredients:
Juice of 1 lime
1 tablespoon olive oil
Dash of pepper
1/2 teaspoon kosher salt
2 roma tomatoes chopped
1 kiwi, skinned and chopped
1 mango, skinned, seeded, chopped
Directions:
Squeeze the juice of one lime into a stainless steel bowl. Slowly drizzle the olive oil into the bowl as you whisk.
Season the dressing salt and dressing. Continue to whisk.
Thoroughly toss in tomatoes, kiwi, and mango.
