German potato salad is a mayo-free, vinegar-based potato salad that’s traditionally enjoyed warm. Small crimson potatoes are delicately mixed with a zesty and flavorful pork Dijon dressing that’s truly incredible. It’s ideal for gatherings, celebrations, outdoor grills, and naturally, Oktoberfest!
When the desire for a change in my customary potato salad routine strikes—this genuine German potato salad with a zesty sweet dressing makes for a fantastic substitution. It’s a superb choice when you’re craving a vinegar-based, mayo-free potato salad, but with an added kick. The enticingly warm pork vinaigrette is the key element here, reminiscent of the pork Dijon dressing found in my preferred sautéed carrots dish.
My first introduction to German potato salad (on numerous occasions) was during my time living in Heidelberg, Germany while in university, and I’ve been a devotee ever since. Traditionally, this classic “meat and potatoes” dish combines small crimson potatoes with ham or speck (German bacon) and is served warm. However, I believe it’s equally delightful when served cold for gatherings and summer picnics!
