Cashew ranch without dairy:
– 1/4 cup hemp seeds
– 3/4 cup cashews, both soaked in boiling water for 10 minutes then drained
– 1 cup soy milk
– 1 garlic clove
– 3 tbsp white wine vinegar
– 1/2 tbsp liquid aminos or coconut aminos
– 2 dates
– 1 to 2 tbsp fresh dill or 2 tsp dried dill)
– 1 tsp garlic salt (or use dried chives and onion flakes)
Combine all ingredients from hemp seeds to dates for 1 minute until smooth and creamy. Fold in the dill and onion salt at the end to avoid them from blending.
Peanut ginger dressing:
– 3 tbsp peanut butter
– 1/4 cup water or more to adjust the consistency
– 2 pitted medjool dates
– 2 tbsp apple cider vinegar
– 1 clove garlic
– 1-inch piece of ginger, peeled
– 1/2 tbsp liquid aminos or soy sauce
– a pinch of red pepper flakes for a spicy kick
