Here a quick look at what I eat in a day…better yet, what I ate today.
I am also sharing with you guys 3 easy cucumber recipes that you may have never thought of. Quick, easy and delish!
How many ways can you eat a cucumber? I’m sure there are PLENTY of ways, but in this video I am showing you 3 ways.
For breakfast I made myself a cucumber and fruit salad with a strawberry sauce. I topped it off with mixed nuts, raisins and dried cranberries.
Then for lunch I had cucumber noodles which were AMAZING! The sauce is a combination of Low Sodium Soy, Maple Syrup and a bit of Sesame Oil. Of course I topped it with sesame seeds and Sriracha!
Lastly, for dinner I made myself a cucumber stir fry with red bell peppers and baked tofu. I used some of the sauce that I had left over from lunch and ate it with a side of brown rice.
