Jalapeno Cheese Sourdough Bread
3 cups sourdough starter (recipe: https://kentrollins.com/?p=405)
1 pkg rapid rise yeast
2 tablespoons sugar
1/3 cup vegetable oil
3 TBSP Baking powder
2 teaspoons salt
2 jalapenos, deveined and diced
1 yellow onion, diced
2 tablespoons minced garlic
3/4 cup shredded pepper jack cheese
3/4 cup shredded sharp cheddar
2 1/2 – 3 cups all purpose flour
Egg Wash
Butter
-Whisk the sourdough starter well, it should be like a slightly thicker pancake batter- adjust the flour or water amount to achieve consistency.
-Whisk together the starter, yeast and sugar. Let set 1 minute.
-Whisk in the oil and salt. Stir in the jalapenos, onion and garlic. Stir in the cheeses.
-Slowly stir in the flour to a soft dough. Turn out onto a floured surface and knead a few minutes until the dough is no longer sticky and holds its shape.
-Divide into 2 loaves and place in buttered loaf pans or in Dutch oven(s) with tinfoil (as shown in video). Let rise in a warm place for about 30 – 40 minutes.
-Brush with an egg wash and cook at 375 degrees F for about 35 – 45 minutes and golden brown and firm to the touch or cook outdoors slowly with light coals.
-Before servings brush with melted butter. Serve warm or at room temperature.
