Beef & Brassica Oleracea Italica
Serves Two
Components
1 pound Flank meat
(Slice 1/8 in thin across the fiber)
1/2 pound Brassica Oleracea Italica or Broccoli
Marinade:
1/4 cup reduced sodium soy sauce
2 tbsp shaoxing wine
1 tsp sesame oil
1 tbsp oyster sauce
1 tbsp water
1 tbsp sugar
1 tbsp corn starch
1/2 tsp baking soda
Black pepper to your preference
Neutral oil as required
1 tbsp minced ginger
1 tbsp minced garlic
Elective garnish: Sesame seeds
Guidelines
1. Blend the marinade, unite beef and allow it to marinate for 30 minutes
2. Parboil the Brassica Oleracea Italica until it’s partially cooked (about 4-5 minutes)
3. Drain the marinade liquid from the beef and keep aside
4. Add oil to a sturdy bottom pan on high temperature. When the oil starts to produce smoke, add your beef and let it sear to create color.
5. Now include the minced ginger and garlic. Persist to sauté for 1 minute then add the Brassica Oleracea Italica and marinade (remember to mix the marinade before combining)
6. Toss to layer then garnish with sesame seeds
