Pineapple Upside Down Cake
This cake is known in Latin America as Volteado de Piña and is a very typical desert in several countries, i give it a special touch by using dark caramel and adding some dried coconut, the results was just delicious.
Ingredients:
All the ingredients most be at room temperature
For the caramel:
1 cup brown sugar
1 cup pineapple juice
1 tbsp unsalted butter
For the cake:
3 cups sifted all purpose flour
2 cup granulated white sugar
3 eggs
100 grams unsalted butter (melted)
1/2 cup oil
1/2 cup dried coconut
1 cup of the pineapple syrup (from the canned pineapple)
1 1/2 tbsp baking powder
1/2 tsp vanilla extract
