Chicken Roll With Prunes & Omelette. Recipe.
Ingredients:
2 (8-ounce) skinless, boneless chicken breast halves
Salt and pepper ( to taste)
Spices (optional)
12 pitted prunes
2 egg
4 tablespoons milk or water (milk is optional)
1/2 cup cheese
1/4 cup butter, melted
Directions:
First we need to prepare the chicken, wash and soak the prunes.
Cut the fillet into two parts.
Slice of chicken to fight off both sides. Add salt and pepper.
Break the eggs into a mixing bowl and scramble with a fork or a whisk. Add a little bit of salt & pepper, water (milk is optional). Mix well.
Add to the skillet, but remove the eggs once they reach your desired consistency.
Lay the omelette on fillet, add cheese, prunes and spices.
Close roll.
Grease with butter chicken roll and bake in the oven at 400 degrees F for 25-30 minutes or until chicken is tender and no longer pink.
Expand foil. Sprinkle with a little bit of Cheese and the Parsley.
Bake for another 5 minutes.
This is also good for pork chops. A very nice substitute fror the prunes is dried apricots.
Baked Chicken Breast With Mushrooms And Cheese. Recipe.
Ingredients
Boneless Skinless Chicken Breast (Chicken fillet)
3 tablespoon sour cream
4 medium fresh mushrooms, chopped
1 medium onion, chopped
1 cup tomatoes, chopped
Parsley – 1 bunch
1 cup grated cheese
Salt, pepper and other natural spices – to taste
Instructions
Preheat oven to 375 F/190 C degrees.
Line a baking sheet with aluminum foil, and coat the baking sheet with oil spray.
Fillet, cut in half lengthwise, the result is 2 thin half.
Beat the chicken and put on a baking sheet.
Season with salt, spices and pepper.
Spread the sour cream over the chicken, then top with mushrooms, the onion rings, tomato and then finally, the cheese.
Sprinkle the vegetables or mushrooms with a little more salt if you like.
Bake in a preheated oven to 375 F/190 C
for 30-35 minutes or until tender (depending on the size of your breasts).
Chicken and Cheese Muffins With Red Pepper. Recipe.
Ingredients
1 cup (250 mL) chicken, cooked, chopped
1 teaspoon (5 mL) butter
1 cup (250 mL) onions, finely-chopped
1 cup (250 mL) red pepper, diced
6 mushrooms, sliced
2 eggs, medium
1 cup (250 mL) cheese, grated
1 cup (250 mL) self-raising flour
1/2 cup (125 mL) milk
1/4 cup (60 mL) cup parsley
Salt, pepper, spice to taste
Instructions
Preheat the oven to 400°F (205°C).
Grease a muffin tray lightly.
Melt butter in a non-stick skillet.
Sauté the red pepper, onion and sliced mushrooms for three minutes.
Add cooked chopped chicken and stir to heat through – about 2 more minutes.
Spoon the mixture into and cool slightly a bowl.
Beat eggs and combine with milk, flour and half of the shredded cheese.
Add salt, spice and pepper (as per taste).
Stir into the cooled chicken and vegetable mixture.
Pour the chicken-flour mixture into the muffin pan. Sprinkle with the other half of remaining shredded cheese.
Bake in a preheated oven to 400°F/205°C for 25 minutes or until golden.
Using a toothpick inserted in the center to test for doneness.
Remove from the oven and let stand to cool five minutes.
If you don’t have self-rising flour and you have a recipe that calls for it, you can make your own by combining 1 cup all purpose flour with 1 tsp baking powder and 1/4 tsp salt.
