Handi Paya:
Ingredients
Mutton paye 6
Oil ¼ cup
Water ¼ cup
Ginger garlic paste 1 ½ tbsp
Green chilies 3 chopped
Chopped onion 1 cup
Paya masala 1 packet
Chili powder 1 tsp
Crushed red pepper ½ tsp
All spices powder 1 tsp
chopped coriander leaves 2 tbsp
Julienne cut ginger 2 tbsp
Green chilies 2
Wheat flour 2-3 tbsp dissolved in ½ cup water
Whole all spices 1 tbsp
Cinnamon sticks 2-3
Cardamom 2-3
Clove 4-6
Black pepper corn 4-6
Water 10 cup
Salt 1½ tsp
Water ¼ cup
Water as required
Bay leaf 1
Wheat flour 2-3 tbsp
Water ½ cup
Green coriander
METHOD
• Boil mutton paye with mixed whole spices, 10 cups water till tender and 2 cups stock left.
• Heat ¼ cup oil plus ¼ cup water in a handi, add boiled paye with stock, remove handi.
• In an other handi heat ¼ cup oil, add onion fry till light golden, add ginger garlic paste, paya masala, chili powder, crushed red pepper, ¼ cup water, fry well.
• Add this to the paya mixture, when boiling thicken with aata paste, cook for 10 minutess on low flame.
• serve by garnishing with coriander, green chilies and ginger julienne and serve with nan or parathas.
