I picked up my $40 box of Zaycon chicken breasts last week and when I brought them home processed them into manageable dinner portions for my family. I wanted to share with you what I did. I processed half and left them plain and I processed the other half into freezer marinated chicken in a variety of flavors. I took a look in my pantry to see what would make good flavor combos and ran with it. This is a quick and easy way to mix up your meal plans by using what you have. I wanted to make this as easy as possible and while I love a good freezer meal. Sometimes I don’t have the time to prep all that produce and ingredients. Freezer marinades are a happy medium. Just grab your favorite meat package and pop it in your slow cooker, either thawed or frozen or even popped into your pressure cooker for a quick, no brainer meal. Steam some veggies and add pasta, rice or potatoes and dinner is ready in no time!

I like to prep my sink and counter top area where I will be working with a good bleach wipe down, just to be sure there is no cross contamination. Then I go to work trimming up the meat. I like to use either my Rada Cook’s Knife or my Rada Stubby Butcher Knife that has been sharpened to perfection with my Quick Edge sharpener.

The breasts will be whole and have only been removed from the bone so you will need to cut the breasts into two pieces. You can trim them any way you prefer. I like to trim them very well, by removing any membrane as well as any fat around the edges and any questionable bits that I think are gross. Then I like to cut each breast into two cutlets by slicing them in half through their hemisphere. Kind of like a butterfly, only cutting all the way through instead of leaving it attached on one edge. This works best for us. Unless I am stuffing the breast, I have no need to butterfly.

I use gallon size zip top bags for storage and I am sure to mark them with a Sharpie prior to getting started. I like to use a plastic container to prop the bags open during the process. This just makes things a bit easier for me. I also like to fold the top of the bag down on itself so I don’t get any chicken junk in the zipper seal or on the outside of the bag while I am doing all of this.

Buying your meat in bulk is a great way to have budget friendly meals on hand any time. This also helps me to make quick and easy quick recipes. I love the freedom buying from Zaycon allows me in meal planning and they rotate their selection every three months so when you are ready for more chicken, ground beef or bacon, you won’t be doubled up on what you have already purchased.

I used pantry stock to make my marinated chicken. I used about a cup of each of the marinades in the bag with the chicken and just massaged it in once the bag was closed. I made one bag each of sun dried tomato and basil Italian chicken, sweet baby ray’s bbq chicken, balsamic salad dressing marinated chicken, sweet Thai chili chicken and two bags of teriyaki chicken using my favorite Soy Vey Teriyaki sauce. I also made a bag of pizza chicken using a small jar of pizza sauce and a good sprinkle of pizza seasoning.

These marinated versions can be thawed and cooked in the slow cooker, pressure cooker or pan seared or roasted or even thrown on the grill, with the exception of the pizza chicken which I highly recommend goes in the slow cooker. I will be sure to follow up with you on all these so you can see how they were made.
