Egg Chat
Ingredients
Eggs – 6 no.
Tomatoes – 3 large sized
Onions – 2 medium sized
Garlic cloves – 8
Curry leaves – 2 springs
Cumin seeds – 1 teaspoon
Mustard seeds – 1 teaspoon
Mint and coriander – 3 tablespoons (chopped )
Garam Masala – 1 teaspoon
Dhaniya Powder – 1 teaspoon
Turmeric – 1/2 teaspoon
Chilli Powder – 1 1/2 teaspoon
Lemon juice – 2 tablespoons
Salt and oil as required
Method
Boil eggs for 9 minutes and set them aside.
In a pan take 3 tablespoons of oil and fry the onions untill golden brown.
Now in another pan, add oil, chopped garlic, cumin seeds, mustard seeds, curry leaves and mix well.
Add chopped tomatoes to the above mixture and fry them for 5 minutes.
Now add garam masala, dhaniya powder, turmeric, chilli powder, salt and mix well.
Fry the mixture for 3-4 minutes.
Now add little water to the mixture followed by boiled egg yolks and mix well.
Add the chopped egg whites followed by chopped coriander and mint and turn off the stove.
Garnish it with fried onions and squeeze 2 table spoons of lemon.
Serve it hot or along with roti/bread.
