Recipe
1 tsp ginger, minced
2 cloves garlic, minced
4 chicken thighs, boneless
¼ onion, chopped
1 tbsp Sesame oil1 tbsp Mirin
1-2 tbsps miso
1 tbsp Soy sauce
1 tbsp mirin
1 tsp sugar
4 cups chicken bone broth
Ramen noodles
Your favorite ramen toppings
In a pot, on medium high heat, add a drizzle of oli and then fry the ginger for about 2 minutes, then add the garlic for a minute and add the chicken. Season it with salt and pepper and cook on each side for 3-5 minutes until golden brown.
Add the sesame oil, mirin, miso, soy sauce, sugar. Mix well to let the miso dissolve. Add bone broth and bring everything to a boil. If you want it more soupy, add another cup of water. Simmer for 10 minutes to let the flavors marry while you prepare the noodles.
In a pot of boiling water, if you’re using fresh or dried ramen noodles, cook according to the package’s directions.
Remove the chicken from the broth and cut into thin slices.
In a large bowl, add the noodles, add your favorite ramen toppings along with the chicken. I like adding spinach, corn, mushrooms, and a 6 minute egg. Pour the broth over the ramen noodles and enjoy!
