Chicken & Rice is such a recipe staple, especially for families with young kids, or anybody looking to stretch their meals with inexpensive starches. I challenged myself to come up with some different ideas for this standard dish, including one recipe using CAULIFLOWER rice! None of these recipes use “cream of” soups!

1lb chicken breast, diced
1/2 onion, chopped
2-3 celery stalks chopped
2tbsp butter
1/2 C Buffalo sauce
2tbsp ranch mix
1.5C white Rice
2.5C water
1C cheddar cheese, shredded
salt & pepper to taste
green onions & blue cheese (optional)
