Today I am sharing 5 super easy store cupboard meals. These meals are great for when you are trying to stretch your weekly shop and when trying to use up all the items in your store cupboard that you don’t know what meal to add them to!

MEALS & INGREDIENTS:
Chickpea and Coconut Curry
1 tbsp coconut oil
1 large red onion thinly sliced
3 cloves garlic minced
1 inch fresh ginger
1 tbsp garam masala
1 tsp ground turmeric
1/2 tsp ground black pepper
1/4 tsp cayenne pepper
1 tsp salt
2 tomatoes
1 tin coconut milk
1 tin chickpeas
2 limes freshly-squeezed lime juice
Chopped fresh coriander for serving
Tuna, Lemon Linguini
400g linguine
2 tins tuna
1 red chilli, deseeded and finely chopped (optional)
Zest and juice of 1 lemon
2tbsp chopped fresh flat leaf parsley
2 garlic cloves
Lots of good extra virgin olive oil
Three Bean Stew
olive oil
2 celery sticks
1 onion
4 garlic cloves
2 red chillies, deseeded and finely chopped
1 tin chopped tomatoes
2 tablespoons tomato purée
2 peppers
3 tins beans of choice, drained and rinsed
1 veg stock
Salt & Pepper
Handful of fresh coriander
Spanish Style Lentils
1 onion
2 celery stick
2 bay leaves
5 cloves garlic
200g chorizo
250g lentils
2 carrot
500-800ml Veg stock
Chickpea Stew
125g chorizo
1 red onion
3 garlic cloves
1 tsp smoked paprika
1 tsp cumin
1 tin tomato
Juice 1 lemon
1 tin chickpeas
1 veg stock
Salt & Pepper
Handful flat-leaf parsley
Sourdough bread
