INGREDIENTS:
Yellow Rice:
1 cup rice
2 cups water
1 tablespoon cold pressed coconut oil
1 teaspoon onion purée
1/4 teaspoon salt
1/2 teaspoon chicken seasoning
1/6 teaspoon crushed black pepper
1 tablespoon turmeric
1 clove garlic grated
Butter rice:
1 cup rice
2 cups water
2 Tbsp butter (1&1/2 Tbsp to cook rice, 1/2 Tbsp for garnish)
2 spring onions (chopped-1 for cooking rice and 1 for garnish)
1/4 teaspoon salt
1/2 teaspoon chicken seasoning
1/6 teaspoon crushed black pepper
1/4 cup chopped parsley or cilantro
Rice and beans:
1 cup rice
1 cup water
1 tablespoon cold pressed coconut oil
1/2 cup parboiled black beans
1/2 cup black beans broth
1/4 cup finely chopped white onions
Small sprig of fresh rosemary or 1/4 teaspoon of dry rosemary
1/4 teaspoon salt
1/2 teaspoon chicken seasoning
1/6 teaspoon crushed black pepper
1/4 cup chopped parsley or cilantro for garnish
Jollof Rice :
1 cup rice
2 cups water
1 tablespoon cold pressed coconut oil
1 tablespoon tomato paste
2 tablespoons chopped onion
2 tablespoons chopped celery
Small sprig fresh rosemary or 1/4 teaspoon of dry rosemary
1/4 teaspoon salt
1/2 teaspoon chicken seasoning
1/6 teaspoon crushed black pepper
1/6 cup diced carrots
1/6 cup cut green beans
1/6 teaspoon smoked paprika
1/2 teaspoon chili powder
Small bay leaf
Pilau:
1 cup rice
2 cups water
1/4 cup olive oil
2 large shallot onions (sliced thinly)
1/2 cup diced lamb or beef
1/4 teaspoon salt
1/2 teaspoon chicken seasoning
Spice blend: (1/2 teaspoon cinnamon sticks/ powder, 1 star anise, 1/6 teaspoon each of fennel seeds, coriander seeds, cumin seeds.)
1 tablespoon raisins
