Recipe 1 | Overnight Oats
– 1/2 cup oatmeal
– 1/2 to 3/4 of almond milk (depending on how thick or fluid you like it)
– Any topping you like (I added banana, strawberry, almond butter, chocolate chips, coconut shavings)
**Leave in fridge overnight or for at least 7-8 hours. Enjoy cold or heat in microwave for 1 minute. Can leave in fridge for up to 2 days**
Recipe 2 | Peanut Butter & Jelly with Banana & Chia Seeds
– 2 slices of whole grain bread
– peanut butter (or almond)
– jam
– sliced banana
– 2 tbsp chia seeds
Recipe 3 | Gluten-free “Pizza”
– 2 pieces of gluten-free tortilla bread (works best with gluten-free because it gets crispier)
– pizza sauce
– whatever toppings you’d like (I used mushroom, bell pepper, sun dried tomato & spinach)
** Put in a 450 degree oven for 15 minutes or until golden brown and crispy **
Recipe 4 | Green Smoothie
– roughly 2 cups spinach
– small piece of cucumber
– 1 cup of frozen fruit (I like mango, strawberry & banana)
– 1 tbsp almond butter
– 1.5 tbsp of coconut “yogurt”
– almond milk + water as liquid (sometimes I put a splash of orange or apple juice for sweetness)
– add chia seeds on top (1 tbsp)
