HI GUYS, today I am sharing 4 quick & easy snacks recipes to try in lockdown. These snacks are super delicious- Bread pakora, Corn chaat, Bread pizza & Onion bhaji. FULL RECIPES:
Corn Chaat
Ingredients
Sweet corn- 2 cups, blanched
Red onion- 1/3 cup, finely chopped
Tomato- 1 small, finely chopped
Green chili- 1 small, finely chopped
Coriander leaves- 1/4 cup chopped
Lemon juice- 1 tbsp
Salt- 1/2 tsp or as per taste
Red chili powder- 1/2 tsp or as per spice level
Chaat masala- 1 tsp

How to blanch corn
Boil water in a vessel. Add corn to it and let it boil for 3-4 minutes or until tender. Strain it and put it in ice cold water. Now the corn is ready to use.
Put corn in a mixing bowl and add all the ingredients putting lemon juice and coriander leaves in the end and mix well. Corn chaat is ready. Enjoy!!

Bread Pakora
Serving- Makes 10-12 pieces
Ingredients
White bread or any bread of your choice
Gram flour/Besan- 1 1/2 cup
Onion- 1/4 cup
Green chili- 1 small, finely chopped
Garlic- 2 cloves, finely chopped
Coriander leaves- 1/4 cup, chopped
Salt- 1 tsp or as per taste
Turmeric powder- 1/2 tsp
Red chili powder- 1/2 tsp
Coriander powder/dhania powder- 1 tbsp
Water- little more than 1 cup

In a mixing bowl put besan and add water to it little by little to make a smooth batter. Keep it aside for 5-6 mins. Add salt and spices and mix. Add onion, garlic, green chili and coriander leaves and mix well. Take slices of bread and cut into half in triangles. Heat oil in a deep frying pan. Dip the slices of bread in batter and fry them in hot oil on medium flame until golden brown. Serve these quick yummy bread pakoras with ketchup and green chutney or sauces of your own choice. Enjoy !!

Bread pizza
Serving- makes 3-4 bread pizza

Ingredients
White bread or bread of your choice- 2-3 slices
For instant homemade pizza sauce
Tomato sauce- 3 tbsp
Hot sauce- 1 tsp
Mixed herbs- 3/4 tsp
Garlic powder- 1/4 tsp

For topping
Onion- cut into 1/2” long thin slices
Capsicum-cut into 1/2” long thin slices
Tomato-cut into 1/2” long thin slices
Jalapeños- cut into thin slices, as per spice level
Dry oregano- to sprinkle on top
Red chili flakes- to sprinkle on top
Mozzarella cheese- 1 cup
Butter to grease the pan

For instant homemade pizza sauce , take all the ingredients for pizza sauce in a bowl and mix well.
Take slices of bread and spread pizza sauce evenly. Sprinkle some mozzarella cheese. Now put pieces of onion, tomato, capsicum and jalapeño. Add cheese on top. Sprinkle some oregano and chili flakes. Heat a pan and grease it with some butter and put bread slice to toast on low flame. Cover the pan so that cheese melts on top. Toast until bottom is well toasted brown and cheese is melted. If well toasted and cheese hasn’t melt fully, you can microwave the bread pizza for few seconds to melt it. Bread pizza is now ready. Cut it into triangle and enjoy this homemade delicious pizza hot !!

Onion Bhaji
Ingredients
Onions- 2 medium, cut into very thin julienne
Besan(gram flour)- 3 tbsp or more if needed
Rice flour- 1 tbsp
Green chili- 1 small, finely chopped
Fresh ginger garlic minced- 1 1/2 tbsp
Fresh coriander leaves/ cilantro- 1/4 cup
Salt- 1/2 tsp or as per taste
Red chili powder- 1/4 tsp
Kitchen king powder- 1/4 tsp
Turmeric powder- 1/4 tsp
Coriander powder- 1/2 tsp
Ajwain seeds(carom seeds)- 1/4 tsp
Baking powder- 1/4 tsp

Put thinly cut onion julienne in a bowl and sprinkle some salt over it. Mix well with your hands and keep it aside for 5-8 minutes. After water is drawn nicely from the onions put red chili powder, kitchen king masala, coriander powder, turmeric powder, ajwain seeds, green chili, coriander leaves, minced ginger-garlic and mix well. Now put besan (chickpea flour), rice flour, baking powder and mix well. Add more besan if needed to coat the onions nicely. You can add little bit of water if required but the coating should be thick paste and not runny at all. In the meanwhile heat oil in a vessel to deep fry the bhaji. Now mix all the ingredients well with hands. Make clumps of batter with your hands and put in oil one by one. Fry the bhajis on medium flame until they are golden brown. Onion bhaji is ready to be served hot with your choice of chutneys or ketchup. Enjoy!!
