Sautéed chicken atop a layer of potatoes
Serves 8
For the chicken sauté:
600 grams chicken breast
3-4 tbsp oil
1 onion
5-6 green bell peppers
1 capsicum pepper
2 cloves garlic
2 tomatoes
1 tbsp butter
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1 tsp paprika
1 tsp thyme
1 tsp ground pepper
For potato balls: 7-8 potatoes
1 tbsp butter
1 tsp black pepper
1.5 tsp salt
1/2 glass milk
optional nutmeg
For the tomato sauce:
1 tbsp tomato paste
a pinch of salt, black pepper, cumin
Hot water (1/4 cup)
Cheddar cheese
Instructions:
Commence by boiling the potatoes until tender.
Meanwhile, heat oil in a pan for the chicken sauté. Add the diced chicken and sauté until browned.
Continue cooking by incorporating onions, peppers, and garlic. Finally, introduce the tomatoes, spices, and salt. Cook for another minute or two, then remove from heat.
Mash the boiled potatoes while warm. Add butter, salt, pepper, and milk; mix thoroughly.
Take equal portions of the mashed potatoes, form into balls, create a hollow center, and place the chicken sauté on top.
Sprinkle cheddar cheese over it and pour the tomato paste sauce around the edges of the baking tray. Bake in a preheated 200-degree oven until the cheese is golden brown.
