Ingredients:
Eggplant(long slices) 1 Cup
Mustard seeds 1/2 Teaspoons
Cumin seeds 1 Teaspoons
Onions(chopped) 1 Numbers
Turmeric powder 1/2 Teaspoons
Curry leaves 1 Springs
Chopped green chillies 1 Numbers
Red chilly powder 1 Teaspoons
Coriander powder 1/2 Teaspoons
Potatoes(boiled pieces) 1 Cup
Oil 4 Tablespoons
Dry coconut powder 1 Tablespoons
Garlic 4 Clove
Directions:
1. Heat oil in a pan and add mustard seeds, ¼ tsp cumin seeds, onions, eggplant, turmeric powder, curry leaves, chopped green chillies and place the lid and cook it.
2. Add red chilly powder, coriander powder, potatoes and mix thoroughly.
3. Crush the garlic and cumin seeds with the pestle and add to the above mixture.
4. Atlast add dry coconut powder and coriander leaves and saute it for 2 min.
5. Now the sukha aloo baingan is ready to serve with phulkas or roti.
