Ingredients:
1 lb. Green Beans, Trimmed
1 Cup Cashews, Chopped
2 Tablespoons Butter
1/4 Cup Lemon Juice
1 Tablespoon Red Wine Vinegar
1/4 Cup Brown Sugar
1/4 Cup Fresh Mint, Chopped
Ingredients by Weight:
16oz./480g Green Beans, Trimmed
4 oz./120g Cashews, Chopped
1oz./25g Butter
2oz./60ml Lemon Juice
0.5oz/15ml Red Wine Vinegar
48g Brown Sugar
0.2 oz./5g Mint, Chopped
Directions:
1. Rinse and trim the green beans. Roughly chop the cashews, set aside. In a large frying pan, over low heat, melt the butter. Add the cashews and roast, stirring constantly, until lightly browned. Add the green beans. Cook for 5 minutes, stirring continually.
2. Add in the lemon juice, vinegar, brown sugar, and mint. Stir until the beans are well coated. Continue to cook another five minutes. (The green beans will still be crisp at this point. If you prefer them soft, continue to cook, stirring occasionally, until they soften.) Serve.
