Spaghetti Squash is an excellent side dish to just about any meal. Make this stuffed spaghetti squash, and you transform it from a side dish into a main course. I love spaghetti squash, but it can be boring if you don’t have a way to take it to the next level. This recipe for spaghetti squash will leave you wanting more.
Ingredients for two whole spaghetti squash
Spaghetti Squash (cooked until softened) about 30 minutes
10 Oz sliced crimini mushrooms (or whatever kind you prefer)
1 bunch fresh spinach (frozen can be used)
1 tsp garlic
1/2 onion diced
5 Oz Mozzarella Cheese shredded
1/4 Cup flour
1/4 Cup Canola oil
1 1/2 Cup milk Add more milk if getting too thick. We are looking for a thick gravy consistency
Season to taste
If you have leftover sauce, It goes great with vegetables such as brussel sprouts, broccoli and cauliflower
