In summer in Russia it is common practice to grill meats over charcoal at one’s dacha (summer house — which is a leftover from the Soviet era when every Russian was given two homes — one in the city and one in the country with a garden area for summers). Russian men often pride themselves on grilling meats, just as American men are fond of barbecue in summer. Naturally as a chef, I have a reputation to uphold and I can’t be outdone by some amateur Russian guy. So I created this recipe to blow anyone else out of the water. Sure it’s cheating — but it is AWESOME, as you will see! It worked so well that we turned it into a frequent weekend special during summers at the restaurant.
