1. PEA-FFECTION (Pea side dish)
From “Meals Men Love – How to Catch a Man in 3 courses”.
SERVES 2
Ingredients:
2 cups peas (e.g. snow peas or frozen peas)
1 teaspoon salt
3 teaspoons pine nuts, toasted*
1 tablespoon olive oil
1 tablespoon lemon juice
Fill a large saucepan with water. Stir in 1 teaspoon salt and bring to the boil. Add peas, cook for 5-10 minutes or until just tender. (Alternatively microwave for 4-5 minutes until soft and hot). To make the dressing, mix toasted nuts with oil and lemon juice. Drain peas and place in a serving bowl. Drizzle over dressing, toss well.
Tips: To toast nuts, place them in a non-stick fry pan for 3-5 minutes over medium-high heat or until lightly browned.

2. FRENCH MASHED POTATOES
From “Meals Men Love – How to Catch a Man in 3 courses”.
SERVES 4
Ingredients:
3 large brown (unwashed) potatoes
½ to 1 cup milk (any type is fine)
2 teaspoons butter
3 teaspoons horseradish
Scrub and chop potatoes (do not peel). Place into a large microwave bowl and cover with water. Microwave on high for 15 minutes or until soft. Drain and place into a saucepan over low heat. Gradually add milk while mashing the potatoes to a smooth consistency. Add more milk if needed. Add butter and leave it to melt. Stir in the horseradish. Serve hot.
Tips: Any meat dish with a sauce suits these potatoes.

3. ROAST DELIGHT
From “Meals Men Love – How to Catch a Man in 3 courses”.
SERVES 2
Ingredients:
500g baby carrots (or any baked vegetables like swede, parsnip or a mix)
olive oil spray (if need extra crispy)
sprig of rosemary leaves
Preheat oven to 180°C. Wash and chop vegetables (eg ends off carrots or dice parsnip/swede etc). Place into a baking dish, lightly spray with oil and sprinkle over rosemary leaves. Bake for 40 minutes or until cooked and crispy.
Tips: Fabulous with a baked meat dish and cranberry sauce.
I don’t peel my baby carrots as it makes them soft in the middle and crispy on the outside. I also love to buy lots of packets of baby carrots when on special, then just wash them and freeze. I then microwave them for a few minutes till soft and then oven bake. My current go-to side dish!

4. HE COULDN’T HAVE DONE IT WITHOUT RICE
From “Meals Men Love – How to Catch a Man in 3 courses”.
SERVES 4
Ingredients:
1 tablespoon butter
½ small brown onion, finely chopped
2 cloves garlic, finely chopped
1 ½ cups jasmine rice, washed
2 cups chicken stock
½ cup slivered almonds
1 cup mushrooms, finely chopped (or sliced)
Heat butter in a large non-stick fry pan, fry onion and garlic over medium heat for 2-3 minutes or until softened. Add the remaining ingredients and bring to the boil. Reduce heat. Cover with a lid and leave to cook for 20 minutes.
Tips: Use a NON STICK FRY PAN! — but if you really really want to use a saucepan make sure to use extra butter and stir often so it does not burn.
