Hi there, in this recipe share video, I will share with you an easy one-pan, tasty main dish called Mexican Zucchini and Turkey Bowl. This meal also freezes well too! Enjoy! – Shelly
Mexican Zucchini and Turkey Bowl:
1 Medium Zucchini, sliced and quartered
1 pound ground lean turkey
2 garlic cloves, minced
1 – 8 to 16 oz jar of salsa OR 10oz can diced tomatoes and green chilis OR can of fire-roasted diced tomatoes (I used half of a 16oz jar of salsa)
1 – 15oz can black beans
1 Tablespoon Chili Powder
1 teaspoon ground cumin
1/2 teaspoon onion powder
1/2 teaspoon smoked or regular paprika
1/2 to 1 teaspoon of salt
1/2 teaspoon black pepper
1/8 teaspoon crushed red pepper flakes
1 Tablespoon Olive Oil
Heat the olive oil in a pan. Add the minced garlic and crushed red pepper flakes until fragrant. Add in the ground turkey, salt and pepper. Cook over medium heat until brown and cooked through (no longer pink).
Add in the salsa and remaining spices. Cover and simmer for about 10 minutes. (If mixture is dry, you can add in some water or broth)
Add the zucchini and black beans. Cover and cook about 10 minutes or until the zucchini is tender.
Serve in a bowl with toppings such as shredded cheese, avocado, sour cream, diced green onion, or taco sauce. Enjoy!
