I got this recipe from youtuber GradysMom13. This was so easy and tasted so good.

:::::: INGREDIENTS I USED ::::::
1 pie crust
3/4 lb sausage (I use turkey sausage)
3-4 Large Eggs
4 small peppers or you could usea large green bell pepper diced
1/4 Yellow Onion diced
3/4 cup Almond Milk
1.5 cups shredded Cheddar (or whatever cheese you like!)
Salt & Pepper to taste

:::::: INSTRUCTIONS ::::::
Brown sausage and set aside on a paper towel, in same pan add diced peppers & onions & sauté for several mins til carmelized & almost fully cooked. Pre-heat oven to 350 degrees. Place pie thawed pie crust into a standard size pie dish & be sure it’s flattened out. In small mixing bowl crack 3-4 large eggs & scramble them WELL making sure yolks are beaten well. Then add 3/4 cup of whole milk. Add cooked sausage, peppers, & onions directly into pie shell. Pour egg/milk mixture over the sausage/peppers. Top with 1.5 cups shredded cheese. Spend a couple mins gently folding this all together with a fork. Be gentle! Once combined bake at 350 degrees for approx. 45-50mins or up to 1 hour max. Crust should be lightly browned and when you press down on quiche it should feel “done” This quiche serves 4 adults as a main dish or 8 adults as a side dish. I make a toss salad as a side dish. ENJOY!
