SUBBIE SUPPER Submitted by Joan
SPINACH CASSEROLE
1 16 oz bag frozen chopped spinach, thawed and squeezed dry
1 large carton of small curd Cottage Cheese (24 oz)
1 stick of butter or margarine, melted
6 eggs partly beaten
6 tablespoons flour
1 tsp salt
1/2 pound or more Velveeta Cheese, diced or shredded
Mix all ingredients together and place in large casserole dish or 9×13 pan which has been sprayed. Bake 1 hour at 350 degrees; covered the first half of cooking time. Should be slightly brown and all cheese well melted.
