What I Ate today as a vegan with healthy breakfast and dinner recipes! Today I made a fall-inspired oatmeal with apples, cinnamon, granola, blueberries, and all-vegan, all natural fig butter. I went to Lassens for lunch and had a veggie sandwich with a beet salad and tried Karma Cakes! So good. For dinner I came up with a great way to use up leftovers and add in some more veggies.
