Roasted Mini Peppers and Cherry Tomatoes served with Fluffy Feta Cheese- a perfect culinary union 😋
Ingredients:
1 pound sweet mini peppers
1/2 pound cherry tomatoes
2 tablespoons of olive oil
1 teaspoon of salt
Black pepper, as needed
Feta Cheese Whip:
4 ounces of feta
1/4 cup of full-fat Greek Yogurt
1 tablespoon of olive oil
1 tablespoon of water
1 clove of garlic, crushed
1/4 teaspoon of salt
Black pepper
Zest of half a lemon
Tangy Lemon Dressing:
2 tablespoons of olive oil
1/2 lemon, freshly squeezed
1/4 teaspoon of salt
1 tablespoon of chopped parsley
1 tablespoon of chopped dill
Black pepper
Instructions:
1. Heat up the air fryer to 390 degrees F;
2. Coat the peppers with olive oil, salt, and pepper then air-fry for approximately 15 minutes and keep aside;
3. Season the tomatoes with olive oil, salt, and pepper then air-fry for 5 minutes;
4. Combine feta, yogurt, olive oil, water, garlic, lemon zest, salt, and pepper in a food processor and blend until smooth;
5. Mix the ingredients for the dressing vigorously;
6. Spread the whipped feta on a plate, arrange the peppers and tomatoes; drizzle the dressing over them and indulge! 😋
