These are my favorite healthy vegan Thanksgiving recipes. I decided to change it up from how I normally make my mushroom gravy. I added carrots and celery to give it a more complex flavor. The roasted veggies are a favorite, especially the fennel and purple potato, and the mashed potatoes could not be any easier to make. This was a practice run for my mushroom gravy recipe that will be in my upcoming recipe book. Is this not also the cheapest way to eat delicious food ever? We get to feast for very little money.
