DELICIOUS RECIPES 👩🍳
Creamy Harissa Pasta (taken from my app)
Prepare the cream:
– 1/2 cup raw cashew nuts
– 1/2 cup water
For the pasta dish:
– 4 cloves of garlic
– 5 cups cherry tomatoes
– 1 tbsp tomato paste
– 1 tbsp harissa paste
– 3 cups vegetable broth
– 11 oz dry whole wheat pasta
Stir-Fry Sauce (featured in my app)
Ingredients:
– 2 cloves of garlic
– 3 tbsp unsweetened peanut butter
– 1 1/2 tbsp rice vinegar
– 1 1/2 tbsp tamari sauce
– 1/2 tbsp maple syrup
– Water for desired consistency
Tray Bake (a highlight from my app)
Key components:
– 1 1/2 lb yellow potatoes
– 3 1/2 cups cauliflower
– 1/2 red onion
– 1 can (15 oz) chickpeas
– 1 cup cherry tomatoes
– 1 tsp yellow curry powder
– 1 tsp ground cumin
– 1/2 tsp paprika powder
– 1/2 tsp salt
Oven at 365F/180C for 25-30 min
Sauce:
– 1/2 cup unsweetened coconut yogurt
– 2 tbsp lime juice
– 1/8 tsp salt
– 1 tbsp fresh mint
