Gluten Free | my weekly food choices ( easy, nourishing meal concepts! )

Hey pals, welcome!🌞 I opted to follow a gluten-free diet this week and here are the straightforward and wholesome meal concepts I crafted! If you experiment with any of these dishes, drop me a message, I’d be thrilled to see it 🥰 PLEASE bear in mind that this week’s food plan is tailored to me, not necessarily suitable for everyone. Feed your individual body in a manner that suits you. I’m just an ordinary person experiencing life – not every meal I have is impeccably balanced or meticulously planned, I make an effort but I’m not a nutrition expert.

gluten is not unhealthy, and it’s unfair to villainize it. Bread and pasta do not lead to weight gain, and carbohydrates are not detrimental to your overall well-being.
Our ancestors survived on bread for centuries! However, the caliber of our wheat has regressed. Wheat should not be solely accused of causing sensitivities in many individuals. Instead, the blame should be placed on monoculture farming practices and large corporations that haphazardly produce the food that the masses consume. Hopefully, as time progresses, we can nurture our planet, soil, and cultivate premium ingredients that our amazing bodies can flourish on.

Blueberry Pancakes
• 2 cups oat flour
• 1 tsp baking powder
• 2 tbsp sugar
• 3 finger pinch of salt
• 1 1/3 cup plant milk ( e.g., cashew, oat, coconut etc… )
• 1 tsp vanilla
• 1 cup frozen blueberries
• 1/3 cup walnut pieces
• coconut oil for cooking


• Combine oat flour, baking powder, sugar, and salt in a large mixing bowl

• Heat a nonstick pan on medium-low with some coconut oil

• Mix milk and vanilla into the bowl to form the batter. Once thoroughly incorporated, gently fold in the blueberries and walnuts!

• Once the pan is sufficiently hot ( ENSURE IT’S HOT BEFORE POURING IN THE BATTER! ), pour the batter and cook until both sides are nicely golden. These pancakes won’t bubble like traditional ones, but they will easily come off the pan once the first side is golden!

• Serve with maple syrup and a sprinkle of cinnamon ✨

Green sauce

1/2 cup raw cashews
2 handfuls of spinach
1/2 cup basil ( firmly packed )
1/2 avocado
1/4 block firm tofu
1 tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
2 tbsp lemon juice
2 tbsp white balsamic vinegar ( alternatively, use more lemon juice )
1/3 cup -1/2 cup salted pasta water OR plain water and 1 tsp salt

You can either soak the cashews in hot water for 20-30 minutes or blend them first to break them down. If you choose the latter, remember to scrape the blender’s sides afterward.
Toss all ingredients into the blender and blend until silky smooth. Begin with 1/3 cup of water and add small splashes as necessary!

Rice Paper Roll Dip:
4 tbsp PB2 ( or 2 tbsp real PB lol )
sriracha sauce to taste ( approx. 2 tsp for me )
1 tbsp tamari ( accidentally used soya sauce, oops! )
1 tbsp maple syrup
1 tbsp rice vinegar ( swap for lime juice )
Gradually add water until you achieve your desired texture

 Pickled red onion:

1 large red onion
1/2 cup apple cider vinegar
1/2 cup water
1/2 – 1 tsp chilli flakes
1 tsp salt
1/2 tbsp maple syrup

Slice the red onion thinly and place it in a glass jar. Combine all other ingredients in a pot. Heat on low-medium heat until simmering
Pour the vinegar mixture over the onions, seal the jar, and let it sit overnight on the countertop
