Recipe starts: 0:32. Healthy, vegan banana cakes for Easter! These cakes are gluten-free, refined sugar free, oil-free, and vegan. I’m also showing you how to make vegan buttercream frosting using natural food colorings and an all-natural alternative to frosting too! Hope you enjoy! Oil-Free Vegan Banana Cake
3 large ripe bananas, mashed
1/2 cup unsweetened almond milk (I used Cailifia Farms)
2 tsp vanilla
2 cups gluten free flour (I used the Bob’s Red Mill kind)
2 tsp baking powder
1/2 tsp baking soda
1 tbsp cinnamon
1/4 ground cloves
1/4 tsp salt
Mix wet ingredients in large bowl and set aside.
In a another bowl, combine dry ingredients and mix together until well blended. Add dry ingredients to wet ingredients and mix until well combined.
Transfer to a 9x13in baking sheet (I used a cooking sheet bc I don’t have a smaller pan and it worked too)
Note: lightly spray pan with cooking spray, or lightly grease with vegan butter, or use parchment paper to prevent sticking.
Bake at 350 for about 10-12 minutes. Mine took 12 minutes. Insert a toothpick to check if it’s done. Careful not to over bake. It will become dry if it cooks for a long time 🙂
Remove from oven and let cool before cutting into shapes.
*****Note this is not a very sweet cake on it’s own. This is because it’s meant to be frosted and I don’t like insanely sweet desserts. Some cakes are good without frosting but this needs a thin layer of icing on top in order to achieve the perfect level of sweetness.****
Vegan buttercream frosting recipe
1/2 vegan butter
4 cups powdered sugar
1/4 cup unsweetened almond milk
1 tsp vanilla extract
colorings: use matcha powder, spirulina powder, turmeric, cinnamon, cocoa powder, strawberry puree or any fruit jam – raspberry and blueberry would make pretty colors. I would wish those in the or blend in blender, don’t just stir or it will separate.
toppings: shredded coconut, raisins, cocoa nibs, vegan marshmallows, vegan chocolate chips, vegan granola, activated buckwheat, quinoa crisps, puffed rice, hazelnuts, almonds, or even fresh fruit. Get creative!
