Recipe:
2 chicken breasts (cooked, chilled and shredded)
1-2 apples (diced) approximately one and a half cups
1/3 cup chopped pecans
1/3 cup dried cranberries
Sauce:
1/2 cup greek yogurt
2 Tbsp mayo
1 Tbsp red wine vinegar
1 tsp dijon mustard
1/2 tsp honey
1/2 tsp onion powder
2 tsp dried rosemary or 1 tsp finely chopped fresh rosemary
Prepare the chicken breasts (I prefer using a slow cooker with added herbs), refrigerate the chilled chicken overnight, then shred or dice it.
Combine the sauce ingredients in a small bowl.
In a large bowl, mix the chicken with the sauce, then add pecans and cranberries.
Keep refrigerated.
Enjoy on sandwiches, croissants, wraps, or with crackers.
